My gas range has large burner heads. They heat the outer edge of pots and pans much more than the center portions. Cooking requires frequent stirring to evenly heat food. Anything that splashes above the surface gets burned onto the inside of the pot. I was hoped that this would fix that problem. When I ordered this mat I didn't understand how it worked, my fault.This does work for simmering only. First you heat your food to a simmer then you place the mat under the pot. I turn the burner off for a moment to keep from being burned, then you turn the burner on a low heat to bring it back to simmer for as long as you need. The mat is not designed for high heat. Do not put your burner on high while using this mat, it may cause it to warp or worse.If you are like me and want something to evenly distribute the heat, even while the burner is on high, you need to buy a different product. Note: I have Revere Ware with copper bottoms to distribute the heat evenly. My burners still heat the outer edges of the pots first. It then becomes difficult to remove the food that is burned onto the inside of the pot. I don't have a recommendation yet for a heat disburser that will work.
