The oil is absorbed into the wood fibers, and helps with water resistance and spill clean-up. John Boos recommends oiling this countertop to preserve beauty and durability. (John Boos Mystery Oil sold separately on Amazon). Each edge grain countertop is constructed with beautiful full length exterior and interior rails. During installation, please note that an overhang of 8 inches or more (width), and 12 inches or more (length) must be stabilized with support. I bought this two years ago and put it on top of an old cabinet to make a kitchen island. The quality is incredibly high. The grain is smooth, the finish is perfect, and the cherry has aged absolutely beautifully into a rich, consistent, deep red. I rub it with a butcher block conditioner occasionally, but it was so well oiled before I got it that it always looks gorgeous. It has never looked dry or in need of maintenance. I have butcher block counters too (from a different supplier), and while I love them, they don't begin to match the quality of this piece.
